Fish-free sushi rolls

Vegetarians are able to enjoy healthy sushi as much as meat eaters with these fish-free sushi rolls. Vegetarian sushi rolls allow you to get creative with colour in the kitchen, while omitting fish, a characteristic of sushi rolls. They can be made from a combination of grated baby marrow with wasabi and sesame seeds, grated carrot and alfalfa sprouts, cream cheese and mixed peppers, cucumber with avocado pear and mayonnaise, tofu and rocket, omelette and water cress or whatever other filling you wish to experiment with. Eggplant lasagne with white sauce

This eggplant lasagne recipe is great for vegetarians and can be prepared ahead of time. Ingredients include lasagne sheets, onion, tomatoes, eggplant (or brinjal), mozzarella cheese, olive oil, marjoram and olive oil. The white sauce requires butter, flour, milk and nutmeg. Any cooked seasonal vegetables can be used instead of eggplant for the filling. Oven roasted butternut or pumpkin slices or well drained cooked spinach make for a delicious alternative dish. Preparing a dish of salad leaves

What could be more ancient a dish than a salad made up of freshly picked leaves? As Harold McGee puts it: ‘Leaves are the quintessential vegetable. They’re usually the most prominent and abundant parts of a plant, and they’re nutritious enough that many of our primate relatives eat little else.’ In some temperate areas, spring brings tender young leaves, most of which are edible. Vegetarian tofu burgers

Vegetarian patties can be made with all sorts of ingredients including chickpeas, nuts and lentils. In this recipe we’ll show you how to make tofu burgers for six. You will need a food processor, a grater and a pan. Required ingredients include olive oil, red onion, hard tofu, garlic, basil, breadcrumbs, egg, balsamic vinegar, sweet chilli sauce and burger rolls. Also have some mayonnaise, tomatoes and salad leaves at hand. Allow for half an hour each of preparation time, resting time and cooking time. (more…)

Two cabbage coleslaw with a nut mayonnaise

Cabbage is often looked upon as a rather uninspiring vegetable. But grate it up and add some mayonnaise and it can make for a delicious instant salad. Here we share a recipe for a cabbage and onion coleslaw using a nut mayonnaise, for those who prefer a dairy-free diet. You can replace the nut mayo with any mayonnaise of your choice though. Vegetarian ‘un-meat’ loaf

This protein-packed soya nut loaf can be served hot or cold. For a hot vegetarian meal, cut the warm loaf into thick slices and serve it with mashed potatoes and peas. Add a creamy mushroom sauce and your meal will be delicious. Leftover vegetarian soya nut loaf can be used the following day for a cold meal, in which case it will go well with a fresh green salad, healthy rolls and some mayonnaise. Cheesy stuffed sweet red peppers

Peppers can be stuffed with a variety of fillings. Here we share a recipe using a stuffing made with cottage cheese, walnuts, onion, tomatoes, basil, garlic, red wine, dry breadcrumbs and parmesan cheese. To cater for a meat eater, simply add ham to the recipe. The peppers can be served as a side dish or as a main dish, in which case you could serve them on a bed of a rice of your choice. If you’re having a large dinner party and you want to cater for vegetarians and meat-eaters alike, you can’t go wrong with offering a vegetarian starter. This vegetarian soup takes half an hour to prepare and requires a cooking time of three quarters of an hour. Dips can be prepared well ahead of time and set out for guests, which makes them convenient party fare. This is especially the case if you need extra time to set up your main course. Here we share a few delicious vegetarian party dips including a cucumber dip and a chickpea dip. Each dip shouldn’t take you longer than a quarter of an hour to prepare and will be enough for six. How to make an eggplant parmigiana dish – Italian style

Eggplant parmigiana is a vegetarian baked Italian dish made up of chopped onions, garlic, tomatoes, eggplants, bocconcini (or mozzarella balls), cheddar cheese, parmesan cheese and basil leaves. You will need a saucepan for frying and a baking dish. This recipe will serve six to eight and it should take about half an hour to prepare ‑ and 40 minutes to bake. Once baked, the eggplant parmigiana can be garnished with basil leaves and shaved parmesan cheese. (more…)
