Cock-a-leekie soup is a strange name indeed but it makes sense when one knows what goes into the dish: thin slices of chicken and rings of leek. Perhaps farmyard roosters went into the soup in the past. Tough poultry needs long simmering which isn’t a bad thing when it comes to making stock for a soup. Aside from these two main ingredients, you also need onion, carrots, water, spring onions, parsley, peppercorns and bouquet garni. Prunes can also be added. (more…)

Chocolate pudding with fudge sauce

This is a rich and decadent recipe where the pudding creates its own fudge sauce. It’s quick to whip up as it only takes 15 minutes of preparation time. Cooking time and cooling time both require an hour, so factor that into your plans. Ingredients include flour, baking powder, sugar, melted chocolate, butter, milk, cocoa and water. Once baked, you’ll find the fudge sauce hidden under the upper layer. Although the pudding should be cool, it should not be chilled. (more…)

Spinach and sweet potato curry

Not all curries take an age to prepare and cook. Ready-made home blends or commercial curry pastes and powders can make for even quicker cooking. This spinach and sweet potato curry takes 10 minutes to prepare and less than half an hour to cook. Besides spinach and sweet potato, you will need some groundnut oil, onion, garlic, shrimp paste, turmeric, red chilli, coconut milk and salt to taste. 24 butter scones in half an hour

When it comes to baking, few things are simpler – and more rewarding – to make than butter scones. These scones require fresh butter, as well as eggs, milk and self-raising flour. You will need a quarter of an hour to prepare them and another quarter of an hour’s baking time. With a total baking time of half an hour, it will probably be quicker to bake your own than dash out to the shops when you have unexpected visitors popping by. Cabbage is often looked upon as a rather uninspiring vegetable. But grate it up and add some mayonnaise and it can make for a delicious instant salad. Here we share a recipe for a cabbage and onion coleslaw using a nut mayonnaise, for those who prefer a dairy-free diet. You can replace the nut mayo with any mayonnaise of your choice though. Uncooked fruit and nut biscuits

This recipe is for health nuts who prefer to eat their food as raw as possible. Then again, it’s also a winner for those who are short of time. All you have to do to create about 25 biscuits is mix together rolled oats, dates, raisins, Brazil nuts and some honey. You’ll need a food processor or power blender to grind up the oats and blend the dates. This basic recipe can be used to make chocolate biscuits, peach, or apple and cinnamon biscuits. (more…)

Bergedel fishcakes

Bergedel come from the original Dutch ‘frikadeller‘, which are potato and meat balls. They can be used as dumplings in soup, particularly spicy chicken soup. This fish bergedel recipe requires cod, mashed potatoes, breadcrumbs, coriander powder, onion, egg, vegetable oil and seasoning. The ‘fish balls’ can be served hot or cold as a snack or with a fresh salad. It shouldn’t take much longer than 20 minutes to half an hour to prepare the ‘fishcakes’. Ginger litchis in chocolate

Ginger litchis in chocolate are an unusual combination but they’ll add an interesting twist to any Oriental meal. Alternatively, serve them on their own with coffee or use them as a dessert to finish off a Western meal. The ingredients require tinned litchis, preserved ginger, dark chocolate, sunflower oil and cornflour. You won’t have to use the oil if you have dipping chocolate at hand. Prawn satay with a peanut sauce

Satay refers to spicy marinated meat or seafood that is grilled and served on skewers. Peanut sauce often accompanies satays, as influenced by South East Asian cooking. This prawn satay recipe requires eight skewers, 24 shelled prawns as well as coriander, cumin, turmeric and chilli powders, amongst other ingredients like lemon grass, shrimp paste, tamarind paste and ground peanuts. Allow for a preparation time of 35 minutes and a cooking time of four minutes per skewer and seven minutes for the sauce. (more…)

Poached sole fillets with a creamy grape sauce

Poached sole fillets are a classic for summertime. The fillets are gently poached before being topped with a creamy grape sauce. Pale green seedless grapes are used so as to provide a fruity sweetness to the dish. Ingredients include onion, butter, white wine, fish stock, dried tarragon, egg yolk, cream and a thick béchamel sauce, besides the fish and grapes. The preparation time is one and a half hours because the grapes have to be peeled. Cooking time is half and hour. (more…)
