Carrots are a wonderful source of goodness as they contain so many nutrients. They pack the most carotene out of all vegetables and fruit, and the body converts this into vitamin A. Carrots are also very versatile and can be eaten as is or added to a great pot of stew or curry. The vegetable is also a good source of vitamins C and B, and calcium pectate, a fibre containing cholesterol-lowering properties.
