Eggs are highly nutritious little packages, full of protein, amino acids, 13 minerals including calcium, iron and phosphorous and all the vitamins except for vitamin C. Yolks are made up of 33 per cent fat while the egg whites are made up mostly of water. A high quality egg will have a firm egg yolk that stands upright within a thick white. If food is frozen properly, it can be kept for a good few months or even years. Water makes up the bulk of food and when it freezes, it crystalises ‑ fast freezing is preferable to slow freezing as it allows for smaller crystal formation which means less damage to cell walls. You may have to shop more often but you won’t be throwing things out when they’ve passed their expiry dates.
