Fish-free sushi rolls

Vegetarians are able to enjoy healthy sushi as much as meat eaters with these fish-free sushi rolls. Vegetarian sushi rolls allow you to get creative with colour in the kitchen, while omitting fish, a characteristic of sushi rolls. They can be made from a combination of grated baby marrow with wasabi and sesame seeds, grated carrot and alfalfa sprouts, cream cheese and mixed peppers, cucumber with avocado pear and mayonnaise, tofu and rocket, omelette and water cress or whatever other filling you wish to experiment with. Preparing a dish of salad leaves

What could be more ancient a dish than a salad made up of freshly picked leaves? As Harold McGee puts it: ‘Leaves are the quintessential vegetable. They’re usually the most prominent and abundant parts of a plant, and they’re nutritious enough that many of our primate relatives eat little else.’ In some temperate areas, spring brings tender young leaves, most of which are edible. Vegetarian tofu burgers

Vegetarian patties can be made with all sorts of ingredients including chickpeas, nuts and lentils. In this recipe we’ll show you how to make tofu burgers for six. You will need a food processor, a grater and a pan. Required ingredients include olive oil, red onion, hard tofu, garlic, basil, breadcrumbs, egg, balsamic vinegar, sweet chilli sauce and burger rolls. Also have some mayonnaise, tomatoes and salad leaves at hand. Allow for half an hour each of preparation time, resting time and cooking time. (more…)

A detox can help rid the body of the residues of toxins. It can also help give you a taste of pure and natural food. Creamy asparagus soup with nutmeg

This recipe is inspired by the Continental cream of asparagus soup. It is a delicate tasting soup made with fresh asparagus and can be served with crispy bread and butter. Ingredients include fresh asparagus spears, onion, vegetable stock, butter, flour, cream, and egg yolks. Allow for a preparation time of half an hour and a cooking time of 40 minutes. Use tinned asparagus if fresh asparagus is out of season. Serve with a swirl of cream and a grating of nutmeg. (more…)

Cock-a-leekie soup

Cock-a-leekie soup is a strange name indeed but it makes sense when one knows what goes into the dish: thin slices of chicken and rings of leek. Perhaps farmyard roosters went into the soup in the past. Tough poultry needs long simmering which isn’t a bad thing when it comes to making stock for a soup. Aside from these two main ingredients, you also need onion, carrots, water, spring onions, parsley, peppercorns and bouquet garni. Prunes can also be added. (more…)

Fun ways to prepare fruit

Fruit is an essential part of a balanced diet and is a healthy alternative to fatty snacks like chips and sweets. Fruit can be dull and unexciting and is not particularly tempting when hungry or peckish, though. Liven fruit up by preparing it in some different ways and get your children and yourself eating more fruit every day.
