Making an easy sausage stuffing

Putting together a tasty sausage stuffing is easier than most people think. It adds a great dimension to roast turkey while also being an appetising option for a side dish.

You will need:

  • 1lb. defrosted sausage meat
  • 1½ cups bread crumbs
  • ¼ cup of margarine
  • A large onion
  • 3 sticks of celery
  • 1½ teaspoons of both salt and pepper
  • 1 cube chicken stock dissolved in a cup of boiling water
  • 1 tablespoon poultry seasoning

Preparing the vegetables

To begin making the stuffing, chop up the onion and celery with a sharp knife. Microwave the onion, celery and margarine in a dish on high power for about two minutes. It is a good idea to cover the microwave-safe dish with a paper towel in order to prevent splattering. Remove the dish from the microwave and stir the contents, then return it to the microwave on high power for another two minutes or until the vegetables are cooked. Alternatively you could fry the ingredients in a pan until the onions have browned.

Combine the ingredients

Place the remaining ingredients in a large bowl and then add the cooked vegetables. Mix it all up with your hands until it looks and feels like a decent stuffing mixture, then put it aside while you prepare your turkey.

Stuffing the bird

Fill the cavities of a prepared turkey with your stuffing and then close the cavities by sewing or skewering the entrance to prevent your mixture from spilling out. The sausage stuffing should be packed loosely inside the turkey as it expands when cooked.

Bake then serve

Cook the turkey for the required time, but be sure to keep an eye on the progress of your food to prevent under or overcooking. Once the turkey is cooked, remove the sausage stuffing from the bird and serve it while hot with your meal.
