Make tasty open sandwiches with your toaster

Most people use the toaster just for the simplest tasks – toasting bread to make the old favourites like jam or peanut butter on toast. Of course, bread can also provide the base for some more interesting creations, so try out some new ideas for healthy and delicious open sandwiches for you and your family.

Chicken salad open sandwiches

Top two slices of toast with a quarter of a head of lettuce leaves, then arrange about 100g of chicken breasts – cooked to your liking – on top of the lettuce. Mix a tasty dressing with a quarter cup of plain yoghurt, a teaspoon of horseradish, some paprika, and salt and pepper to taste. Finish off each sandwich with a sliced hard-boiled egg and cherry tomatoes and pineapple chunks. For a meal from the toaster that provides protein but is also great for dieters, this one’s a winner.

Egg salad sandwich

Cream a quarter cup of butter with some lemon juice and a few chives, then spread on two slices of toasted white bread. Mix two chopped hard-boiled eggs with minced onion, a quarter teaspoon of dry mustard and a quarter cup of mayonnaise, then spread onto your sandwiches.

Steak open sandwich

This one sounds a little more extravagant, but there’s no better way to use up leftover pieces of meat. Start off by gently toasting thinly sliced ciabatta in the toaster or the oven, then slice 150g steak into strips and season with salt and pepper, then cook in olive oil on medium high heat for about four minutes. Whisk together two cloves of garlic, finely chopped, with a quarter cup of balsamic vinegar, a teaspoon of dijon mustard, a teaspoon of Worchestershire sauce, and a teaspoon of tomato sauce. Reduce the sauce on a medium heat until it’s halved in quantity, then whisk in a tablespoon of butter and add the steak strips, turning them until they’re coated and cooked, then serve on your toasted ciabatta.
