An omelette makes a nutritious breakfast, and it’s probably the tastiest way to eat eggs. Start out with a basic omelette recipe and adjust it to your own tastes, then add whatever fillings take your fancy. You can tailor each omelette so that everyone gets exactly what they feel like, and you can go for healthy, or indulgent options, or even both. Use a good non-stick pan and the freshest ingredients, and your omelettes are sure to be a success.
The veg option
While omelettes are obviously not suitable for vegans, they are a great breakfast for vegetarians. Try adding cheese, peppers, pan-fried mushrooms, and roasted tomatoes, which will be even tastier with the addition of some Italian herbs like basil. For a Mediterranean option use grilled cheese with roasted vegetables and olives, which will give the meal a strong, delicious flavour.
A new tradition
If breakfast isn’t the same for you without eggs, bacon, and tomato, then combine them in an omelette. Roast the tomatoes and fry bacon pieces until crispy before adding them to the egg mixture in the pan and folding over the omelette.

If you want a meaty breakfast, then just choose your favourites and add them to the omelette. You’ll want to cook everything just the way you like it beforehand, then add it in. A meaty omelette tastes great with spicy seasoning or sauce.
Getting cheesy
Omelettes are just about the only place where cheese and eggs really work well together. To flavour an omelette, mix grated hard cheeses like cheddar or parmesan into the egg mixture before frying it, or add soft cheeses to the filling.
Breakfast for one
A final tip: if you’re making omelettes for more than one person, make each of them an individual omelette rather than cutting up a larger one. As well as allowing you to adjust each omelette to personal tastes, it’ll also make it easier to flip them. When the cooking’s done, sit back and enjoy a perfect omelette, just the way you like it.
