Summer foods: quick chicken on the barbecue

As summer approaches and the weather gets warmer, there’s nothing nicer than spending time outdoors. Not only can you eat outdoors, but you can prepare your meals there, and that means barbequing. If you’re not content with yet another red meat recipe or more burgers tossed on the grill, then try quick chicken – it’s healthy, not too expensive, relatively quick to prepare, and easy to flavour just the way you like it. Why eat chicken?

Chicken is low in fat, particularly when the skin is removed. It’s also high in protein, which makes it good for growing kids and adults alike. Anyone attempting to follow a low-fat diet should consider eating more chicken to get the protein that we all need, while those following a high-protein diet often turn to chicken as the option that’s one of the best in terms of low fat content.

Summer foods call for fresh flavours and tasty, tangy spices and herbs. When preparing barbequed chicken, try marinating it for a few minutes in a mixture of yoghurt, tandoori paste and coriander. You could also use old favourites like lemon juice, or try mint or rosemary – it’s all up to you, as the very savoury taste of chicken works well with just about anything.
