Recipes with muesli

Muesli is a nutritious and delicious breakfast dish but it can get boring and bland if eaten every day. However, leftover muesli can be made into many delicious dishes that can be eaten at any time of day. Make muesli exciting for the whole family and stay healthy with this wonderful alternative to fatty snacks. So get baking and make a fabulous muesli bar, biscuit or muffin that is a perfect addition to your child’s lunchbox or your work lunch.

Muesli bar

Muesli with dried seeds, nuts of berry chunks works great in muesli bars. Combine your muesli with some coconut and corn or bran flakes in a bowl. Add some melted butter, honey and sugar and stir until the sugar is dissolved. Spoon the mixture into a baking tray making sure to cover the entire tray evenly. Bake until golden and then cut into slices. You can top the bars with icing or hardening yoghurt or even drizzle with some chocolate when cooled.

Muesli muffins

Mix together equal parts of flour with muesli (about 75 grams of each) and add a teaspoon of baking powder. In a separate bowl mix together an egg, cup of milk and some honey. Fold the two sets of ingredients together and spoon into muffin tins. Allow to bake in an oven until firm and brown. Enjoy these muffins slightly warm with a dash of butter for a delicious snack or dessert.

Biscuits

There are many ways to make muesli biscuits and a simple recipe becomes something entirely new with the addition of chocolate chips or syrup. For easy to make cookies mix some butter with some sugar until the sugar is dissolved. Add the butter mixture to some muesli and fold in some self-raising flour. Spoon the mixture into little circles on a tray, and bake until golden. Muesli with raisins works great for biscuits.
