A barbecue sauce that’s good for basting

This barbecue sauce recipe gives 750 ml of sauce which can be stored in a glass container in the fridge for a good three weeks or frozen for up to three months. Ingredients include garlic, onion, tomatoes, vegetable oil, white wine, orange rind, lemon juice, Worcestershire sauce, brown sugar, black pepper and chilli sauce. It’s a convenient sauce to have at hand for meals around the barbecue. Allow for 25 minutes of preparation time and three-quarters of an hour of cooking time.

Ingredients

You will need the following ingredients to yield three cups of barbecue sauce: 2 crushed garlic cloves, 1 grated onion of a medium size, 400 grams of chopped tomatoes (preferably peeled), 1/2 a cup of vegetable oil, 1/2 a cup of white wine, the rind and juice of  a medium sized orange, 1/2 a cup of freshly squeezed lemon juice (strained), 2 tablespoons of Worcestershire sauce, 100 grams of sugar (preferably brown sugar) and a dash of chilli sauce.

For a thicker sauce, add two tablespoons of cornflour. This should be mixed to a smooth paste with some water before it is added to the sauce once it has cooked. Stir it in and bring the sauce to the boil again. You will also need salt and pepper to season the sauce.

Method

Place all the ingredients into a large saucepan except for the chilli, salt and pepper. Stir the ingredients as you bring the mixture to a boil. Turn down the temperature and allow the mixture to simmer gently for three-quarters of an hour. When the tomato is well cooked and the sauce is thick, add some salt and pepper to taste.

Stir in several drops of chilli sauce according to your preference before straining the sauce.
