Chocolate pudding with fudge sauce

This is a rich and decadent recipe where the pudding creates its own fudge sauce. It’s quick to whip up as it only takes 15 minutes of preparation time. Cooking time and cooling time both require an hour, so factor that into your plans. Ingredients include flour, baking powder, sugar, melted chocolate, butter, milk, cocoa and water. Once baked, you’ll find the fudge sauce hidden under the upper layer. Although the pudding should be cool, it should not be chilled.

Ingredients

You will need the following ingredients to make chocolate pudding with fudge sauce for six: 120 grams of flour, two level teaspoons of baking powder, a quarter of a teaspoon of salt, 30 grams of plain melted chocolate, 35 grams of melted butter, 155 ml of milk, 3 level tablespoons of cocoa powder and 170 ml of cold water.

Three different sugars are also required: 175 grams of granulated sugar, 50 grams of brown sugar and 50 grams of caster sugar.

Prepare ahead by buttering an 850 ml capacity oven-proof dish and preheat your oven to 170 degrees Celsius.

Method

Sift the following dry ingredients into a bowl: baking powder, flour and salt. Add the granulated sugar, melted butter and chocolate and stir together. Add the milk and stir again until the ingredients are well incorporated. Don’t overwork the batter though.

Pour the mixture into your prepared dish and sprinkle the brown sugar over it. Sprinkle the caster sugar over the brown sugar and then sieve the cocoa powder over the caster sugar. Finally, pour the cold water over the lot and bake in your preheated oven for an hour.

The chocolate-fudge sauce will form while the pudding is baking. Once cooked, allow the pudding to cool on a cooling rack for an hour. This chocolate pudding with fudge sauce is best served with whipped cream.
