Uncooked fruit and nut biscuits

This recipe is for health nuts who prefer to eat their food as raw as possible. Then again, it’s also a winner for those who are short of time. All you have to do to create about 25 biscuits is mix together rolled oats, dates, raisins, Brazil nuts and some honey. You’ll need a food processor or power blender to grind up the oats and blend the dates. This basic recipe can be used to make chocolate biscuits, peach, or apple and cinnamon biscuits.

Uncooked fruit and nut biscuit recipe

You will need the following ingredients to make between 25 and 30 biscuits: 2 cups of rolled oats (raw), 1 cup of dates (pitted), 1/2 cup of raisins, 1/2 cup of Brazil nuts and 2 tablespoons of honey.

Soak the pitted dates in warm water for a quarter of an hour, using just enough water to cover them. Blend the dates with half of the soaking water until such time as you have a jam texture.

Grind the raw rolled oats in a food processor and chop up the Brazil nuts. Mix the oats, nuts, raisins, blended dates and honey together in a mixing bowl. Add more of the date soaking water if necessary. Spread out the mixture and cut into squares. Store the raw biscuits in an airtight container.

Adding other ingredients

This basic recipe can be used to make a variety of other raw biscuits. Try adding four tablespoons of cocoa powder to the mixture to create chocolate biscuits. Apple and cinnamon biscuits are just as easy to prepare: add a grated apple, 3 tablespoons of chopped pecan nuts and a teaspoon of cinnamon to the basic mixture.

You could also add a variety of finely sliced dried fruits. Experiment with dried peaches, pears or apricots, for example. Substitute the date jam in the basic uncooked fruit and nut biscuit recipe with a fruit jam of your choice, be it apricot jam or peach jam.

For healthy fruit, nut and seed bars, add some dry roasted sesame and sunflower seeds to the basic mixture.
