Because strawberry romanoff is a rich and rather decadent dessert, you can serve it in small portions. This recipe allows for six servings and the dessert will take 20 minutes to prepare. You will need to make it well in advance, though, as it needs at least four hours of chilling time before serving. Besides strawberries, cream and the grated rind of one orange, the ingredients call for Van der Hum liqueur, Kirsch and white rum. You can use pineapple or kiwi fruit instead of strawberries.

Strawberry romanoff ingredients

You will need a large punnet of strawberries (wipe them carefully and cut them into quarters), 100 grams of sifted icing sugar, 3 tablespoons of Van der Hum liqueur, 3 tablespoons of white rum, 3 tablespoons of Kirsch, a cup of thick cream and the grated rind of an orange.

Method

Place the strawberries into a bowl and sprinkle 60 grams of the icing sugar over them. Add the Van der Hum and rum and chill for four hours or overnight (make sure the bowl is well covered with cling wrap).

Lightly whip the remaining icing sugar with the cream an hour before you plan to serve the dessert. Add the kirsch and pour this mixture over the strawberries, tossing them gently so as to ensure that they are all well coated.

Using separate glass serving bowls, spoon in the strawberries and cover again. Chill until you are ready to serve and finally, sprinkle the grated orange rind over the strawberries before serving. For an extra touch, sprinkle flaked almonds over the top of the individual portions.

To make a pineapple romanoff, simply substitute the strawberries for a large pineapple cut into cubes. Use Cointreau instead of Van der Hum liqueur. You could also mix pineapple and strawberries together.
